Starters: Green asparagus with truffle cream and roasted seeds (From the first week of May until Midsummer our asparagus comes from Nobis Farms on Gotland) Salmon tartar with shrimp, tomato, fennel and “Skeppsholms mustard” Swedish caviar from Kalix with matured cheese royal, sour cream, red Onion, chives and lemon Thinly sliced lamb with goat cheese flakes, mushrooms, water cress and honey vinaigrette Main courses: Pan fried char with anchovy flavored archipelago sausage, chive hollandaise, cucumber, horse radish and garden herbs Crispy shoulder of pork and sausage from Gotland with gravy and summer vegetables Veal loin with sweet and sour dill sauce, artichoke, baby onion and new potatoes Desserts: Baked rhubarb with whipped lemon cream, Mazarin and dessert herbs Strawberry mousse with vanilla cream and Dark chocolate cake with white chocolate mousse, pistachio, raspberry and arctic bramble sauce Prices: The event menu is for groups over 10 persons.
